Ingredients

2 Cups Almond Flour
2 Scoops Whey or Pea Protein Powder (Vanilla)
1 Cup Greek Yogurt (Plain, Full Fat)
2 units Eggs (Large)
1/4 Cup Honey or Maple Syrup
1/3 Cup Tahini or Creamy Almond Butter
1 tsp Baking Soda
1/2 Cup Dark Chocolate Chips
1/2 tsp Cinnamo
1/2 tsp Sea Salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with silicone liners or grease with coconut oil
  2. In a large mixing bowl, whisk the eggs, Greek yogurt, honey, and almond butter until smooth and creamy
  3. Sift in the dry ingredients: almond flour, protein powder, baking soda, cinnamon, and salt. Fold gently
  4. Fold in the dark chocolate chips
  5. Distribute the batter evenly among the muffin cups, filling each about three-quarters full
  6. Bake for 18 to 22 minutes, until a toothpick comes out clean when inserted
  7. Cool in the tin for 5 minutes before transferring to a wire rack

Notes

Use room temperature eggs and yogurt for a smoother batter.

If the batter is too thick, add a tablespoon of almond milk.
