Description

This Healthy and Hearty: Low Cholesterol Cauliflower Soup is rich, creamy, and satisfies your comfort food cravings while being gluten-free and sugar-free. Made with wholesome ingredients, it's perfect for anyone wanting to eat healthily without sacrificing flavor.

Ingredients

2 tablespoons Olive Oil
1 large Yellow Onion, chopped
4 cloves Garlic, minced
1 large head (about 2 lbs) Cauliflower, chopped into florets
6 cups Vegetable Broth (low sodium)
¼ cup Nutritional Yeast
1 teaspoon Fresh Thyme, chopped (or ½ tsp dried)
Sea Salt to taste
Black Pepper to taste
1 cup Unsweetened Almond Milk (plain)
Fresh Parsley (for garnish, optional)

Instructions

  1. Prepare your vegetables by washing and chopping the cauliflower into small florets, dicing the onion, and mincing the garlic
  2. Heat olive oil in a large pot over medium heat. Add chopped onion and cook for 5-7 minutes until translucent
  3. Stir in minced garlic and cook for 1 additional minute until fragrant, then add cauliflower florets and sauté for 3-5 minutes
  4. Pour in vegetable broth, add thyme, sea salt, and black pepper. Bring to a gentle boil, reduce heat, cover, and simmer for 15-20 minutes until cauliflower is fork-tender
  5. Blend the soup in batches in a high-speed blender or using an immersion blender until smooth. Add nutritional yeast and almond milk while blending
  6. Return blended soup to the pot, taste and adjust seasonings as needed, and reheat gently if necessary
  7. Serve hot garnished with fresh parsley if desired

Notes

For extra protein, consider adding a can of drained and rinsed cannellini beans or chickpeas.

You can substitute unsweetened almond milk with unsweetened oat milk or thin coconut milk.
