Description
Healthy Air Fryer Churro Bites are a lightened-up version of the classic churro, made with Greek yogurt and air-fried for a crispy exterior and soft inside, coated in cinnamon sugar.
Ingredients
1.5 cups Self-Rising Flour
1 cup Non-Fat Greek Yogurt
1/4 cup Coconut Sugar or Monk Fruit
1 tablespoon Ground Cinnamo
2 tablespoons Coconut Oil (Melted)
1 teaspoon Vanilla Extract
Instructions
- In a large mixing bowl, combine the Greek yogurt and vanilla extract. Gradually fold in the self-rising flour until a soft dough forms
- Turn the dough out onto a lightly floured surface. Roll the dough into long ropes about half an inch thick and cut into one-inch pieces
- Lightly coat the air fryer basket with oil spray. Place the pieces in a single layer, leaving space between them
- Air fry at 350°F (175°C) for 8 to 10 minutes, shaking the basket halfway through
- While the bites cook, mix the cinnamon and coconut sugar in a bowl. Have melted coconut oil ready in another bowl
- Remove the bites from the air fryer and quickly toss them in the melted coconut oil, then roll them in the cinnamon-sugar mixture to coat
Notes
Avoid overcrowding the air fryer basket to ensure proper crisping.
Use thick Greek yogurt for best results. Strain if necessary.
Coat churro bites while they are warm to ensure the sugar sticks.
