Ingredients
1.5 lbs Boneless, Skinless Chicken Thighs or Breasts
1 cup Pineapple Juice
1/2 cup Soy Sauce (low sodium)
1/4 cup Brown Sugar (packed)
1/4 cup Ketchup
1 tbsp Ginger (freshly grated)
2 cloves Garlic (minced)
1 tbsp Rice Vinegar
1 tsp Sesame Oil
1/2 tsp Sriracha or Red Pepper Flakes (optional)
1 small Fresh Pineapple (cored and sliced into rings)
2 Bell Peppers (red, yellow, orange, thinly sliced)
3-4 cups Cooked Rice (jasmine or basmati)
2 tbsp Green Onions (chopped)
1 tsp Sesame Seeds
Instructions
- Prepare the Huli Huli Marinade: In a medium bowl, whisk together the pineapple juice, soy sauce, brown sugar, ketchup, grated ginger, minced garlic, rice vinegar, sesame oil, and sriracha (if using)
- Marinate the Chicken: Place the chicken in a large Ziploc bag or shallow dish. Pour about 3/4 of the marinade over the chicken and marinate in the refrigerator for at least 2 hours, or preferably overnight
- Cook the Rice: Cook your rice according to package directions and set aside
- Grill or Bake the Chicken: For grilling, preheat your grill to medium-high heat. Grill the chicken for 5-7 minutes per side. For baking, preheat the oven to 400°F (200°C) and bake for 20-25 minutes
- Grill the Pineapple: Place pineapple rings on the grill for 2-3 minutes per side until grill marks appear
- Sauté Bell Peppers (Optional): Sauté bell peppers in a skillet over medium heat for 5-7 minutes
- Assemble Your Hawaiian Huli Huli Chicken Stack: On each plate, start with a base of cooked rice, place a grilled pineapple ring, top with chicken, and pile on sautéed bell peppers
- Garnish and Serve: Drizzle with reserved marinade, garnish with green onions and sesame seeds, and serve immediately
Notes
For best flavor, marinate chicken overnight.
Grill chicken in batches to avoid overcrowding.
Use a meat thermometer to ensure chicken reaches 165°F (74°C).
