Description

Easy Creamy Italian Meatball Soup is a comforting dish that comes together quickly using frozen meatballs and simple ingredients. With its creamy broth and hearty flavors, it’s perfect for a cozy meal any night of the week.

Ingredients

1 lb Frozen Italian Meatballs
2 tbsp Olive Oil
1 medium Yellow Onio
2 medium Carrots
2 stalks Celery
4 cloves Garlic
6 cups Chicken Broth
1.5 tsp Italian Seasoning
1 cup Small Pasta (Ditalini or Orzo)
2 cups Fresh Spinach or Kale
1 cup Heavy Cream
1/2 cup Parmesan Cheese
Salt and Pepper to taste

Instructions

  1. Sauté the aromatics: Heat olive oil in a large pot, add diced onions, carrots, and celery. Cook for 5-7 minutes until softened
  2. Bloom the spices: Add minced garlic and Italian seasoning, stirring for 60 seconds
  3. Simmer the base: Pour in chicken broth, bring to a gentle boil, seasoning with salt and pepper
  4. Add the core ingredients: Drop in frozen meatballs and uncooked pasta, reduce heat to medium-low. Simmer for 10-12 minutes until the pasta is al dente
  5. Incorporate the greens: Stir in chopped spinach or kale until wilted
  6. The creamy finish: Lower heat, slowly add heavy cream and parmesan cheese, stirring until melted and creamy
  7. Final adjustments: Taste and adjust seasoning with salt and pepper

Notes

For a thicker soup, consider using a roux or mashing some cooked carrots.

To prevent the cream from curdling, do not boil the soup after adding cream.
